L’aflatoxine M₁ est un composé chimique de la classe des aflatoxines, un groupe de mycotoxines produites par trois espèces d’Aspergillus - Aspergillus flavus, Aspergillus parasiticus et le rare Aspergillus nomius - qui contaminent les plantes et les produits végétaux. Aspergillus flavus ne produit que des aflatoxines de type B.

Il est connu comme le produit chimique le plus cancérigène. Ainsi, une limite stricte de résidus d’aflatoxines est établie dans l’UE, aux États-Unis, en Chine, etc. 

Comme le lait est l’aliment principal pour les nourrissons, la LMR actuelle de l’aflatoxine M1 dans le lait est fixée à 0,5 g/ml aux États-Unis et en Chine, dans l’UE, ce nombre est de 0,05 g/ml.
